Constructed of copper, aluminum, and stainless steel, this 10-inch skillet cooks beautifully, stands out handsomely in the kitchen and dining room, and will outlive its lifetime warranty against defects. It's an expensive pan for serious cooks who appreciate its three-ply advantages. The copper exterior conducts heat quickly and evenly and responds to minute temperature changes. The aluminum core extends up the sides, so food is cooked evenly and heat is retained. The inside is heavy, 18/10 stainless steel that won't discolor, corrode, or react with food and is stick-resistant. Add a tapered rim for drip-free pouring and an extra-long, stainless-steel handle that's riveted for strength, and this slope-sided, flat-bottomed pan is ideal for frying fish and chicken or sautéing onions and spinach. For pan-roasting, the skillet is oven-safe to 500 degrees F. --Fred Brack

I have been a loyal Cuisinart customer for some time now; this product is the first in which I have been disappointed. The pan has a great feel and has a solid, durable construction, but there are two problems. First, the pan is off balance - the heavy handle lifts the pan from being perfectly flush on my gas stove burner grate. Second, the handle gets very hot. One can not grab the handle with a bare hand; one must use a mit or pot holder. I am not saying it is a bad pan, only that it falls short of the quality that the price would indicate. I prefer the much cheaper Multi-clad Pro 10-inch skillet.

I recently purchased this pan along with two others from the copper classique line. The first thing that I noticed is that the HANDLE of this fry pan GETS TOO HOT to use without a thick protective wrapping like a rolled up towel. Additionally, while I have no complaints about the EVENNESS of the heating, when buying copper, one expects to gain an advantage in TEMPERATURE CONTROL, which I was unimpressed with. The pan did not heat up or cool especially quickly, and my anondized aluminum seems to outperform it in this regard. The pan is pretty, but to keep it that way, after every use you will need to polish it either with copper polish or a salted lemon half.

I bought a competitors 10" copper omelette pan because I prefered it's shape for making omelettes. It's a good pan. I even rated it 4 stars. On the other hand, it doesn't compare to the four Cuisinart copper pans that I own. The Cuisinart pans are superlative in evey aspect. From basic material choice, thickness of materials, to assembly and fabulous finish, these are the best copper pans on the market. One reviewer mentioned discoloration of the copper finish upon first use. The label and instruction sheet cautioning you to remove the plastic protective coating applied to the copper surface before heating the pan should not be ignored. The ten minutes it takes are well spent. You end with a a fine finish that is easy to maintain. Just follow the directions. If you cook it first, it will take much more effort to remove the baked on blackened plastic coating (I bought a pot at a flea market like that. Paint remover restored the finish to new). Also, this pan is not afraid of heat. It is just as at home in the broiler as it is with any stovetop task.

The one Sunday morning I used this pan, it turned very ugly i.e. the copper all but disappeared and odd splotch marks appeared on the bottom. Only after much elbow grease and polish did the pan look nearly new again. The pan comes with a warning not to use over high heat. I would venture to say it likes low heat exclusively. I would not use this pan for meat or onions.
