Like others, I purchased this "promo piece" at the department store as a low-cost means to sample the new product. My initial intrigue centered on the new metal and domestic manufacture. And I had a talented, objective salesman at Meier & Frank who explained everything and even shared a recipe.

After my first dishes (pasta toss, then an egg dish) it was easy to conclude this line works for me at a lot of levels. Performs as they say. Even heating. Sears nicely. Cleanup is fine, you just hand wash recalling that this is a piece of cookware you are dealing with. I think the folks complaining of cleanup are somewhat unrealistic housekeepers in this regard; your grandmothers could hand-wash their pots and so can you. Calphalon gives you a sample pak of cleaner.

Calphalon attended to lots of little details in this line. For instance, the lid handle has a slight protrusion underneath which allows a firmer grip. Too, the main handle is nicely balanced and fits well in your hand. Lid itself rests smoothly against the pan all around.

At the end of the day this is one of those purchases which costs a little more but results in dramatically higher satisfaction. Heretofore I devotedly used All-Clad (magnificent product too, just by the way) and Farberware, and I putted around with other average items, and I hated plain anodized. But I'm switching to this new metal. With this pan you can say like Mr. Stubblefied says on his rosemary-ginger spice rub shaker, "Ladies and gentlemen . . . I'm a cook."

I got it because it's the right size, the least expensive in the Calphalon One line and I wanted to try Calphalon One. After using it once, I'll stick to Circulon. It heats up nicely and seems like it would be a good pan for searing. Circulon pans are much easier to clean though. Since I like to cook stuff like soups, casseroles, rice dishes and pasta dishes, that is, dishes that simmer over a low heat for a long time, the Circulon pots suit me better. If I give this Calphalon One pan four stars, I have to give my Circulon pans a five star.

Calphalon One are the best professional style pans on the market today.

If you want a pan that is TOTALLY non-stick, go to a department store and buy one for $10.00.

These pans are not fully non-stick and not fully stick. They have the qualities of both. Which any "real" cook will understand and know how to use these pans as they were designed to be used.

If you do not understand why Calphalon has designed these pans, then stick with your 16 pc tin set you got for $9.99 at your local discount center. Do not buy these, you will not appreciate them.

I purchased one of these new and improved pans expecting the best of both worlds. What I found is that the pan is not non stick so omelets etc... still require a non stick pan unless you want to do some series scrubbing and as for searing and clean up the new "ONE" series performs no better than my trusty plain hard anodized pans for cooking or cleanup.

Save your money and get commerical nonstick for those items you need non stick for or regualar hard anodized for steming, pasta and side dishes (my hard anodized stick less than the new "ONE" series) you'll get more for your money!

Just as all of the advertising and packaging says - this pan is truly revolutionary! I have never been able to get such great browning and flavor in a pan that doesn't stick and cleans up so easily. This product is marketed as a 'hybrid' cookware surface - it is NOT nonstick and it is NOT a traditional metal - but rather somewhere in between. Although this pan doesn't have full 'nonstick' qualities, the small tradeoff you make is well worth in terms of food taste and texture. But at the same time, don't worry, because this pan is so easy to clean!
