I have owned two bread machines prior to buying this one--which is used. I have made bread four times (Simple French recipe) and I've not been disappointed. The only drawback is when I take it out of the pan it wants to stick (because it's crusty). I use a knife to loosen it up around the edges and sort of turn it upside down and pound it out. You MUST take out the paddle before the last rise or it ruins the bottom half of the bread. The convection oven makes it nice and crispy! The flavor and texture is the best I've had from a bread machine. I make homemade bread too and of course it's better, but when I need to save time this is second best. I only use bread machine yeast and bread flour (Gold Medal is best). I mix the salt and flour together before adding and I put a little dip or well in the center to add the yeast.
I'm very happy with the machine.

I really enjoyed using the bread machine for the first month and a half than the bread pan got stuck, and I could not use the machine. I called cuisinart who said I need to return it where I bought it and amazon has only a 30 day return policy. So now I have a broken bread machine.

My new Cuisinart 2 pound Convection automatic bread maker does a fine job on bread. I enjoy it very much,
and it has simple instructions, and the readout indicates what the unit is currently doing. I would recommend it.

It's nice to see a quality product that does what it's supposed to do. This machine is well made and accompanied by a well produced instruction/recipe book.

I love this breadmaker. I'll freely admit to being a breadmaker snob who thought nothing could match the human hand. Unfortunately, I can't stand storebought bread because my dear Mum always made homemade bread and I guess those early tastes stick. The trouble was that it takes so much blasted time and attention. I bought another manufacturer's breadmaker a few years ago and returned it after seeing what it produced (soggy, gummy yuckiness). I hesitantly tried the Cuisinart and was thrilled with the results- fabulous, crispy, tall loaves, fully cooked. It produces better bread than if making with stand mixer, by hand, or food processor(I've tried them all). You need to take time to decipher the manual- a bit confusing with charts and cycles. Some experience making bread would be helpful so you can gauge proper consistency, i.e.; adding more flour at early stages of kneading. You can select various crust darkness levels for those who don't like crisp crusts. The dough only cycle is a helpful feature for foccacia dough and the like that you bake in the oven. It's like having a strong-arm in the kitchen who will pound the heck out of your dough for the best texture and rise. A reliable and good friend in the kitchen.
