The aluminum cores conduct heat quickly and uniformly across the pots and pans' bottoms and all the way up their sides. The durable, 18/10 stainless-steel interiors and exteriors are easy to clean, resist scratching, denting, warping, and corrosion, and are nonreactive to acidic food. This 10-inch pan is 2-1/2 inches deep and has steeply rounded sides to facilitate stir-frying. It can also be used for sautéing and can go into the oven for pan-roasting. Its handle stays cool on the stovetop and has a hanging hole, and the pan's rim is flared for dripless pouring. Tri-Ply cookware is polished to a mirror finish outside for beauty and wears a satin finish inside to conceal inevitable utensil marks. This is an excellent pan at a great price. I have been trying to cook more healthy meals, and was looking for something to replace the wok I lost to Hurricane Katrina. When I found this pan, and read the reviews, I decided to give it a try. Well, it has turned out to be one of my very favorite pans. I like the heat conductivity of the aluminum core, combined with the easy care of the stainless interior and exterior. Food may stick some when cooking, but I always use a little olive oil in any pan when I cook. Plus, with the brushed stainless interior, I can use metal utensils without worrying about damaging the finish. It also cleans up beautifully. Any little discolorations are easily removed with a little Bon Ami. This pan stays on my stovetop, because it is used almost daily. And the shiny stainless exterior looks beautiful. Only other thing I could have asked for was a glass lid and a larger handle, or a helper handle. I use the glass lid from a 10 in fry pan when I need one. Not a big deal. I just bought the Calphalon 12in everyday pan, too, and am enjoying it just as much. GREAT PRODUCTS!!!

This wok is fantastic. Extremely sturdy, heats quickly and evenly, and the slope is just right for good turning of the food. The flat bottom is very useful for cooking on a home stove. I use it 4 times a week. Highly recommended.
A real delight to cook with December 1, 2007 John Bales (Dallas, TX) I replaced my Calphalon anodized cookware with the Calphalon Tri-Ply Stainless Steel Pans. They are an absolute delight to cook with. They heat evenly and you don't require as much heat for cooking. They are excellent on top of a ceramic cooktop and don't leave marks like the anodized pans did. Cleanup is a breeze, either by hand or in a dishwasher (which I couldn't do with the anodized). When they begin to look dull or discolored on the cooking surface, a soft sponge and a spinkle of BarKeeper's Friend cleansing powder shines it right up (also works great if things should burn to the bottom. The worst (at least I thought it would be the worst) was eggs stuck to the bottom of the frying pan. No problem. I let it soak for an hour or so and the egg came right off (other pans, this would have been a major scrubbing experience). My sister has the All Clad pans which she loves but after doing a lot of research, I can't find anything that suggests the Calphalon Tri-Ply isn't as good (at least in a residential kitchen) and saves you a lot of money for other gadgets! In fact, you can really stock up a lot on the Collector's Edition pans at fantastic prices. The other pans that you have to purchase at regular prices, I suggest shopping around. I was able to find one that retailed at most places for $150.00 for $60.00 at one store online so definitely shop around before making the final purchase!
Cephalon cookware November 17, 2007 Slim2u Cephalon cookware is, without question, the best cookware I have ever owned. The wok heats easily/evenly and is especially easy to clean. It is far superior to any other woks I have owned. I would recommend this as my best buy of the year!
A Best Buy October 18, 2007 U. Hannigan (USA) I am in love with this pan! I have other high quality, stainless steel pans, but I have been using this one for almost everything. It is very heavy duty and cleans easily and beautifully. It has all of the advantages of a wok, but it is a manageable size and sits flat on the burner. I recommend it to anyone who values quality stainless pans, but can't afford $100+!! (One of the secrets of my kitchen is that most of my best cookware came from Amazon bargains.)
