Wide enough to fry food without crowding, but deep enough for braising and simmering, sauté pans are the workhorses of the professional kitchen. They are a versatile addition to the home kitchen too, and this large 5-1/2 pan will sauté a heap of vegetables or fry a large batch of chicken with ease. The thick, hard-anodized aluminum construction conducts heat evenly and efficiently through the sides as well as the base, and a tempered glass lid seals in flavor while keeping the contents visible. The securely riveted stay-cool steel handles are oven-safe to 500 degrees F, so food can be browned on the stovetop then transferred to the oven to finish cooking.

Cuisinart Chef's Classic hard-anodized cookware features an advanced Quantanium nonstick coating, designed for healthy low-fat cooking. The coating is tough enough for use with metal utensils. Even delicate foods like fish can be cooked without sticking, and cleanup is quick and easy. This pan is replacing another like pan that has been the work horse of our kitchen for 10 years. I've yet to use the pan, however based on the previous pan, it is great!

We purchased this to use on a glass top stove, and found that the pan was not flat.

We assume that not all are bowed, but ours was.

The non-stick surface is fine, but the pan is no better than what you can find at the supermarket: flimsy, light and therefore prone to hot spots. For $49 I guess I can live with the thing, because one does not use a non-stick pan for any serious cooking. If I had paid $149 I would return it in a heartbeat.
