It's truly non-stick if you use it the right way. There's usually no need to bring the stove setting higher than medium high. This sort of cookware takes a bit longer to heat up but once its at proper temperature it cooks really well - evenly, thoroughly with really great results. After you use this cookware a few times, you realize that well made cookware really does matter. One internet commentator recommended testing for the right temperature with a few drops of water - sizzle means just right, and splatter means too hot. They're not as durable as cheap cookware, meaning you can't abuse them and expect them to last. They're sort of like fine instruments that you have to take care not to overheat - which damages them - or to mar the surface with harsh abrasives or cleansers - which apparently can ruin the cookware.

Best cookware set I have ever had. They cook evenly. You don't have to use high heat at all. I is really hard to burn food. Only bad thing is the handle gets real hot.
