I baked two batches of madelines side by side, one in this pan (set on a baking sheet), and another in a traditional pan with non-stick coating. I brushed both pans with canola oil before using. As per the package instructions, I allowed the madelines in the silicon pan to cool completely before removing them. The madelines in the traditional pan released easily, were golden and high, and had a pronounced design. The other batch were almost soggy (probably from cooling in the pan), flat, pale, and did not have the appearance of a madeline. To make matters worse, they did not release easily, and a few of them even broke as I attempted to remove them. I would not recommend this pan.

First of all I must note that I have never used a traditional metal madeleine pan (although I have done a lot of baking). So although I can't compare this silicone pan to a regular one, I can say the following: PRO - Madeleines released easily with either a light brushing of melted butter or nonstick cooking spray, also, I let them cool before unmolding. - Pan is extremely easy to clean with a sponge - The madeleines did not have quite as much browning as I hoped for, the madeleine design is not especially pronounced. CON - It is floppy and thus a little difficult to carry a full pan in and out of the oven. - The pan did not lay 100% flat on the oven rack because of the madeleine wells. I tried setting the pan on top of a cookie sheet for stability, but the madeleines did NOT cook properly; they were gummy and underdone on the bottom even when the tops were cooked through. NOTE - Although amazon's description says this is a "mini" pan I think the madeleines are the traditional size (?). The finished cookies are about 1.75" x 2.75". I used a small cookie scoop which worked perfectly to fill them about 3/4 full. Do not overfill or the cookies will spill out of the molds - not as pretty.
