Amazon.com Review
Splendid examples of why modern, safe pressure cookers are popular with contemporary cooks, the 5-1/4-quart pressure cooker and 2-1/8-quart pressure frying pan in this set quickly and healthfully cook foods with trapped steam at temperatures higher than boiling. Two lids, which fit both pans, are included--the pressure lid and a glass lid--so one pan can be used to cook under pressure while the other is used conventionally. Made of heavyweight, mirror-finish, 18/10 stainless steel, each pan has two handles and an aluminum disk sandwiched in stainless steel in its bottom to quickly and uniformly conduct heat.

Using a pressure cooker saves time and 70 percent of the energy normally consumed while cooking. Pressure-cooking requires little water so nutrients, flavor, and color are not boiled away. Vegetables emerge vibrantly colored. Stews, soups, beans, even meat loaf and pork chops and desserts like bread pudding come out tasty and nutritious. (A detailed instruction booklet containing dozens of recipes is included.) Meats can be browned before the pressure lid is locked on. The pressure lid's valve stem shows high and low pressure so heat can be adjusted for different foods. After cooking, pressure can be reduced slowly (by just letting the cooker sit a while), normally (by pressing the pressure indicator), or quickly (by running tepid water on the lid's rim).

Safety measures abound for the pressure lid. A rubber gasket ensures a tight seal. A vent releases steam if pressure builds too high, as does a valve that also locks the lid when any pressure whatsoever is inside the cooker. Cleanup is a bit involved. The pans, gasket, and lid require hand washing, and the gasket needs a light oiling. Normally, the valve is self-cleaning, but if food passes through it disassembly is required. --Fred Brack

5 out of 5 stars Don't wait - buy this now!   May 15, 2008

There is a bit of a learning curve when attempting to pressure cook items that might be better cooked conventionally, but man, it consistently cooks the best brown rice, I finally mastered polenta and beans are a successful no-brainer. My Boston baked beans recipe takes seven hours in a crock pot, 45 minutes in the pressure cooker and I thought they tasted better. Onions can taste boiled in the pressure cooker so generally I saute them and then lift them out of the oil or butter and set aside for adding later. The shortened cooking time by no means reduces the flavor of conventional long-cooked recipes. The shortened cooking times are truly astonishing and absolutely have to translate to a reduction in your energy bill. The cooker cooks at such low temperatures that my electric burner just barely achieves that low a temperature. I was a little nervous about the concept in my first go-around, but that vanishes fast. My Sitram cookware is collecting dust!

5 out of 5 stars Overall great pressure cooker   May 2, 2008

I used this set for 2 years now. Here is a short summary on different kinds of food cooked:
Pork / Cow / Lamb Stew - Tender and great flavor in 45 minutes, low pressure
Soup with bones - Rich flavor in 2 hours, low pressure
Bean sweet soup - Beans are all broken down as wanted in 2 hours, low pressure
Brown rice - Too watery, hard to control, same time as normal rice cooker
Vegetables - Easily overcooked; with practice, cooked in minutes

About their customer service, it was perfect. My first set was used for 3 months and there is a small crack between the aluminum sandwich and I asked for an exchange from Kuhn Rikon. It was prompt and easy.

The small lid near the valve does easily broken with that plastic. Mine is broken now. I recommend not to take that out to clean often or with extreme care. It is not that really functional apart from shielding off the stream.

1 out of 5 stars Overpriced, Dangerous, Lousy Customer Service.   April 22, 2008

This was given to me as a gift, and it jammed the 3rd time I used it. Had to whack it open with a wrench.

Tried to return it and ended up on the phone with the US distributor who was insulting and basically said I did not know how to use it.

I am a VERY experienced cook.

Threw it in the trash and bought I Presto that I am MUCH happier with.

5 out of 5 stars SINGLE PERSON'S DELIGHT !   April 15, 2008

I bought the duo about a year ago, and remain delighted with the choice.

I've often walked in the door from work, gone straight to the kitchen and started dinner in one of the pots. As it reached the correct pressure, I'd run in to change clothes, and dinner was then ready in time for the evening news ! AND, most importantly, soups and stews (my favorite winter fare) taste as if they've been simmering all day.

As an experiment, I took a FROZEN chicken quarter, added some water, wine, some "rustic cut" (okay, okay, I tend to randomly hack up 'taters and carrots and onions) veggies and let 'er rip for 15 minutes or so... after releasing the pressure, I added the fresh herbs from the poultry blend pack at the Giant, and incredibly had a real sit-down non-junk food meal in well under an hour. YES, you can eat well even if you've forgotten to take something out of the freezer ! (It does add to the flavor however, to be able to brown a defrosted piece of meat before pressure cooking...)

I routinely use the larger pot for larger cuts of meat and poultry, always ensuring to use some bone-in variety and several cups of liquid so that I'll have two meals - the original one, and the home-made stock leftover.

Despite the cost, one of the best kitchen investments I've ever made. Am considering giving this as a gift for a wedding.

5 out of 5 stars Too good   April 7, 2008

I know this is an expensive pressure cooker. And you're hesitating, wondering if it's worth it, especially given that there are very good alternatives that are cheaper - i.e. the Presto, etc. That said, if you use your pressure cooker infrequently - i.e. not that often, but like to have one around for the occasional roast, etc. go with the cheaper alternatives - no shame, they work perfectly. But if you use your pressure cooker a lot - couple times a week, this is the way to go. It's almost too good. Literally, the times and amounts of water that you are used to using - cut those in half. And the anxious watching of the jingly thing on top of the pressure cooker - forget it. You close the hatch and its like a streamlined high performance machine - i know it sounds hoaky, but it really is. Super quiet, and you are literally going to have to put your burner on super low (a plus if you're paying for gas or electric), because this thing is so airtight and self contained. It works so quickly and efficiently that it is actually practical to come home from work and cook something like a roast. And bear in mind that not only does it cook fast but it achieves pressure superfast - like a few minutes. So is it worth it - yes. But only if you're a real pressure cooker user. If you're not, I truly believe it would mess with your mind and confuse you with how fast it cooks your stuff.
