Product Description This 3-in. Paring Knife has a thin blade and handle. A terrific paring knife for peeling potatoes and apples. Also great for coring and trimming work. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global's original knives have thinner blades and are lighter than traditional European-style knives, Global also makes a European-style "heavyweight" line for cooks who prefer hefty cutlery--like this 3-inch paring knife for cleaning and peeling vegetables and fruits. Global also dispensed with bolsters on most of its knives, including this one. Most Global knives have hollow handles, but the handle on this knife is solid. BEST KNIFE IN THE WORLD!! September 17, 2008 C. Dean (Sanford, NC) I had purchased this knife a while back and somehow misplaced it. I tried using one of my other knives but they just didn't make the mark so I found this same knife and purchased it again. It is the best paring knife I have every owned!!!! You will never regret your purchase but caution, it is very sharp and stays sharp!!
