Cut crusts off bread, produce thin slices of onion (without the tears!), or transform chicken breasts into strips with exceptional precision.Made in the ancient city of Seki, Japan, Shun knives rely on extremely sharp blades, made of Japanese VG10 steel clad with 32 layers (16 on each side) of high-carbon stainless, it delivers precision slicing, cutting and chopping unprecedented by its competitors. Imagine, a knife made the same way as ancient Samurai swords, handcrafted still today. Sharper out of the box than other knives, the Shun Classic maintains its sharpness longer, since the finely-polished blade edge has a natural tendency to remain straighter, yet can be honed using a standard steel or sent to the factory for free sharpening. I recieved the bamboo 3 knife box set a few years ago I love them! But I noticed one of my knives with a bit of rust and notches over time, of which I have never seen in any of my knives before.I find them really easy to use and am looking forward to purchasing a larger knife like the 6" Chef Dragona

I used to think it wasn't necessary to spend money on an expensive knife because I'm not a chef; now I know that doesn't matter. I had this knife on my wishlist and received it for Christmas. Is it saying to much to say it makes prep work enjoyable. I have a Chicago Cutlery set but this is the only knife I use. The angle of the knife makes cutting and slicing easy and enjoyable. I've bought this same knife as a wedding present and recommend it to all my friends. Though it may not be a low cost purchase, the functionality and enjoyment I receive when using it makes it well worth the cost. I'm now a believer in having a quality knife in the kitchen! Thanks AB for putting your signature touch to a wonderful Shun product. I hope to add to my knife collection soon!

This is the best knife we have ever owned. It's the easiest to handle and it's also the sharpest. It stays sharp for a really long time. Tomatoes never see if coming, they fall at it's feet. I'm serious once you get one of these babies you will never wanna use one of your other crappy knives again.

The knife has an extremely sharp blade, but it is not as hard as my American and German knives. I put a couple of notches in the blade. I don't know how, but I wasn't doing anything that I had not done with my Gerber or Wüsthof knives. The blades of my Gerber knives don't have any defects after over 20-year old of use (and abuse). The angle on the Shun knife is a nice design feature that makes it easier to chop and mince.

By default, my long fingers make it hard for me to wield a knife properly and safely. However, the angle on this knife turns the blade up just enough to make my daily cutting duties easier--and safer. We use this knife to cut everything from garlic and onions, to raw chicken and seafood. We are always pleased with the sharpness of the blade and the quality of the cuts. I would recommend Shun and Alton's Angle knives to anyone I know. Best knife I own.
