A fine gift for the discriminating diner or traveler.Made in the ancient city of Seki, Japan, Shun Pro knives rely on extremely sharp 2.5mm blades, made of a single piece of Japanese VG10 steel for strength, called the Honyaki style in Japan. It offers precision slicing, cutting and chopping that is unprecedented by any of its German competitors. Sharper out of the box than other knives, Shun Pro knives feature a traditional Japanese blade, with a one-sided beveled edge and hollow-ground or concave back. Japanese chefs in particular prefer the single bevel because it can be honed backed to its original sharpness, even after hours of slicing, using a whetstone. In addition, the hollow ground divots on the back produce air pockets that remove friction when slicing, so food releases easily without any loss of flavor. I purchased this knife for cooking while camping, where a folding kitchen knife is more convenient to carry. I'm very impressed with it. The blade is very thin and very sharp. Just as a test, I used it to peel a soft ripe tomato, which my regular paring knife could not do. No problem at all. The construction is very high quality, although there is a slight ding on the handle next to the rivets. It's too light for regular use, but very nice as a stand-in portable paring knife.

I collect quality stainless knives. This SHUN like all there knives, exudes quality. And yes, I use it to cut my steak. I feels like cutting with a scalpel. Very sharp and nice to hold. Sits well on the dinner plate. Comes in a presentation case, w/ leather pouch. VG-10 is one of the super stainless steels, keep it clean! Not cheap, and you might have to wait for delivery.

It's a bit expensive, but it's also a one-of-a-kind knife. It comes with a very well made carrying box and a belt holder. It's a lockback design, when fully opened it locks into place with absolutely no play from front to back or side to side. It's good steel and comes with a razored edge, but it's not Shun's 32 layer "damascus" steel - disappointing. Overall a great collector's piece.
