Amazon.com Review The Japanese version of the chef's knife, the santoku is useful for straight chopping, mincing, and slicing of larger quantities of vegetables and meat. Cooks with smaller hands may prefer this 7-inch blade as the shorter length offers better control while cutting. The width also provides a great platform for transporting chopped vegetables from cutting board to sauté pan. This version of the santoku actually has a hollow edge or oval cut-outs along the blade. The benefit to this blade style is that cooks can cut paper-thin slices and individual slices won't stick to the blade. Part of the Pro S series of cutlery, this knife has a fully forged high-carbon stainless-steel blade. My wife's favorite knife July 5, 2008 Michael J. Frederick (San Antonio, TX) This has fast become my wife's most used and favorite knife. This was part of a replacement set I bought for her and it has really done the job. The knife is well balanced, the blade is extremely sharp and cuts through stuff with little effort. The hollow edge really makes a huge difference in how it cuts as it slices through stuff like it was going through warm butter. This is one of those knives that is a must have for anybody doing much work in the kitchen. Since we got this and the other Henckels knives her old set has quickly disappeared and is no longer used. Absolutely great knife!
worth the price May 29, 2008 cali franny (CA) i've owned this knife for more than two years and have never taken it to get professionally sharpened. i do use a sharpening steel but that's about it. love it! i will never go back to cheap knives again.
Fabulous knife January 4, 2008 Joann Jordan (Newtown, PA USA) This is a great knife! Bought it as a gift, but when it came wanted to keep it for myself!! The traditional nice style of the Pro S model. Good handle, well balanced. Nice quality steel. Great addition to your knife collection. Worth the extra bucks.

I too was sent the wrong version of the knife and in my case they would not replace it with the correct Twin, so I got a refund (still to arrive-show up on my credit card bill). It was just a waste of time and a dissappointment dealing with Warehouse Deals...
Razor sharp thin blade July 27, 2007 Toshie Neely (CA USA) This knife is made of thin blade. It is sharp but needs sharpening every week or so. I love the shape; it allows you to chop, dice, and mince. Vegetables can be sliced extremely thin.
