Many recipes these days call for homemade chicken stock, yogurt cheese, or another basic item that must be created before continuing with a particular soup or spread. Inevitably, a strainer is needed early on in this process. You might cheat and try to use a colander--but it'll be a disaster (trust me on this). A strainer with a fine mesh basket is what you need to retain the yogurt while draining the whey, or to prevent bits of meat or bone from getting into savory chicken stock.
