I've already used these several times and I haven't had any issues with burning or cake sticking to the bottom or sides, so it gets cool points in that department. However, as long as I can remember, my mom always used 8-inch pans for her double layer cakes, and now I see why: because the 9-inch pans are slightly wider, it makes a significant difference in height if you use a boxed cake mix. If you bake from scratch, no problem, just make 1 1/2 times the normal amount of batter. If you use a boxed cake mix, you have 2 options: use 1 box and deal with your flat cake, or use 2 boxes so you can have a layer cake with a good height and use the extra batter for cupcakes...I prefer option #2. But if you haven't bought these yet, do yourself a favor and buy 8-inch pans. Please note, this rating lowered to 4 because of the size, which applies to all 9-inch pans, the quality and price are both good

The only flaw that I can see with these pans is that the cake comes out dark. When you layer the center of a double layer cake with white icing, you can see the dark center as well because it baked dark on the bottom of each pan. I'm not sure what can be done to fix this using these pans. I only know that when I use my old pans that are aluminum (silver), I don't have the same problem. The cakes come out perfect. By the way, this happens know matter what cake you make. I made a white cake, a yellow cake, a lemon cake and even a chocolate cake. All of them came dark on the bottom with this pan, and seemed a bit dryer too, not as moist. I am disappointed and I am going to buy new aluminum pans.

I bought this product to use with holiday candy making. My peanut brittle, butterscotch and fudge did not stick at all. Great product and it fit my needs
