Amazon.com Review This seven-inch santoku knife combines the precision of a Western chef's knife and the power of a Chinese cleaver. It's an essential in most Japanese homes as well as many professional kitchens. Great for chopping and dicing herbs or vegetables, the broad, straight blade also produces razor-thin and precise slices of sashimi, or any other fish, meat, or poultry. Oval-shaped indentations on each side reduce friction for a cleaner cut and help release food so that it falls away from the blade. Chicago Cutlery's Centurion series offer high performance at an excellent value for a heavy-duty, forged-blade knife. Nicely balanced in the hand, they're made from high-carbon stainless steel for rust and stain resistance as well as long-lasting beauty. Chicago's exclusive Taper Grind edge is razor-sharp and cuts with precision; these knives will need to be re-sharpened on a regular basis, but they take an edge well and with maintenance can stay out-of-the-box sharp for years to come. The full tang extends from one end of the knife to the other for a balanced feel and added strength, while the heavy-duty forged bolster enhances safety. Ergonomically designed polymer handles are durable and non-porous, so they're impervious to water and bacteria, and they have a handsome traditional look. Triple-compression stainless steel rivets secure the handle to the blade for increased stability. Chicago Cutlery covers their knives with a lifetime guarantee; they recommend hand-washing and drying for best results. --Mary Park

dull and available September 18, 2008 MacGyver (New Mexico) This item can be purchased at the local Wal-Mart for less. While you are shopping, you might want to also buy a knife sharpener, because you will need one. It would not cut tomatoes without extreme care. I did not contact the seller - -what can they do except send me another dull knife. I sharpened it myself and now it is a good knife, but the "grooves" in the blade that are supposed to keep cut slices from sticking do not do their job. It is no different than a knife without the grooves. It is very well balanced and heavy enough to cut anything in the kitchen. The handle and finger guard are excellant.
Works, nice knife for cheap March 11, 2007 GWHayduke (Michigan) 2 out of 2 found this review helpful
I sharpened this knife on my Tormek and it took a very nice edge. It was so sharp that it took a third of my finger nail clean off...still growing it back. I bought it because it was a cheap way to obtain this style of knife and it seems to work fine. Start with this knife before spending hundreds of dollars on a "real" Santoku. This may be all you need.
PERFECTION March 9, 2007 BOMBOM (Pontotoc, MS United States) This knife was all I had hoped and more!!! I would definitely recommend it to anyone especially if you spend any time in the kitchen.
nice February 15, 2007 D Koontz (Cosh, Ohio) I am not a professional chef. I just started cooking and these are the best knives for me right now. I bought the 7 knife set along with this.
solid knife great price January 10, 2007 D. Mcintire not the sharpest of them all, not the most nimble of all but quite functional from onions to garlic and fish. It's got a nice handle and balance I use it quite often and am happy with it
