Amazon.com Review Shaving off thin, even pieces of cheese with a knife can be a tricky. Hand-held cheese slicers designed to be drawn across a piece of cheese, make the task much easier. Trudeau's adjustable cheese slicer makes the job easier still, with a steel roller that creates a smooth slicing motion. The soft, rubber handle of this slicer also has a ridged thumb spot for a no-slip grip, and is slightly curved for extra leverage. The slicer harp, as well as roller and slicing wire, is made of stainless steel. Moving the spring-loaded roller among a trio of notches on the inner sides of the harp arms, changes its distance from the cutting wire and adjusts the thickness of cheese slices. The wire is anchored on each end by small metal blocks inserted into slots on the underside of the harp arms. To replace the wire, edge blocks slowly out of slots using a butter knife or broad-bladed screwdriver. Wash the Trudeau slicer by hand to preserve the life of its thin steel cutting wire. Allow it to dry completely before storing, or hang dry on a utensil rack. The slicer measures 7-1/2 inches long by 4-3/4 inches wide across the harp. High quality cheese slicer June 4, 2008 Don Bicknell (Pomona, CA USA) This is the best cheese slicer I have ever owned. I love the adjustable wheel that makes it possible to select the thickness of the slice and also the extra wire. The whole slicer is strong and made of heavy gauge steel and has a very well designed and easy-to-grip handle. It's the last cheese slicer I will ever need to purchase.
So far, so good. . . June 1, 2008 Eric Belt (St. Louis, MO USA) I've had a couple cheese slicers before this but they were not as sturdy. I've only used this one a few times, but it seems well made.
Trudeau Adjustable Cheese Slicer April 15, 2008 David A. Roush (Pine Plains, Upper New York United States) The product works (Sturdy). As advertized, you can set the cheese cutter to three different cheese cutting widths and they give you an extra cutting wire just in case. We have used it numerous times with no problems. Cutting up bars of cheese with this product is very easy which was the main reason we bought it.

I was impressed with the build quality of this slicer. I also liked the replaceable wire feature, in case it breaks. The novel method of adjusting for thickness of slices was ingenious, too. However, the metal roller is made of aluminum. Personally, I do not want aluminum in any kitchen product to contact the food I eat. The health hazards of aluminum are considerable, and are well established. I cannot recommend this product to anyone who is concerned about improving their health. To me, improving one's health is a far more important issue than convenience or ease of use. I have decided to use steel knives to cut cheese instead, although it may take longer, or be more difficult to do.
I like it - solid, adjustable, easy to clean. December 3, 2007 SFHandyman (San Francisco) Seems really solid and easy to clean. The round roller pops out very easily to adjust for three different thicknesses - or you could leave it off for thicker, free form cuts. It is held in place by two posts that fit in a set of three different thickness holes on the handle. One post on the roller is spring loaded, so you just slide the roller sideways and it comes right out (like the bar that is used to connect a watch band to a watch). It comes with an extra wire also. This is so much better than my last one. The old one had a set screw that was supposed to allowed you to move the roller to change thickness. It was not graduated, so finding a match for a previous slice size, was only with much experimentation and luck. The screw was hard to turn, and eventually impossible without pliers and it didn't hold the roller parallel to the wire, you had to force it back and forth to get it even. The roller could get gunked up at the connection posts - and there was a space between the roller holder and handle that couldn't be washed without disassembly. The Trudeau solves all of those problems in an elegant and simple way.
