Editorial Reviews:

Product Description
If you love to bake but are disheartened by cookies and pastries that burn and stick, you'll certainly appreciate this flexible, non-stick Exopat Baking Mat, often referred to as Silpat. Made in France, the mat promotes even browning without burning, and easy removal from the pan without sticking. To use, simply place the mat on your baking sheet ??? no greasing required. Place your cookies or pastries on top of the mat and bake in the oven as you normally would. After baking, simply remove the mat, shake it clean and store it away until next time. The mat is freezer safe and can withstand oven temperatures up to 580 degrees. Use it over and over - it's guaranteed to last up to 3,000 bakings.

Made of slippery silicone, the Exopat baking mat prevents cookies and pastries from sticking, eliminating the need for parchment paper, nonstick cooking surfaces, and the greasing of baking sheets. It measures 16-1/2 by 11-5/8 inches, wipes clean with a sponge, is heat- safe to 580 degrees F, can be used 2,000 to 3,000 times, and is an essential tool for an avid baker. --Fred Brack

3 out of 5 stars Not as nice as a Silpat.   August 25, 2008

I have a Silpat and generally use it for making bread and other doughs. It really is a great nonstick working surface which helps me to use less flour. I don't use it for baking because I'm sensitive to many chemicals. I bought the Matfer for my daughter after reading reviews that claimed it was comparable to the Silpat (and was cheaper). The first thing I noticed was that it just didn't have the nice heft that the Silpat has, which I can just unroll and toss on the table and it lays immediately flat. This was thinner and curling a bit on the edges. Next, I noticed that it was dirty with some sort of greasy spots and the white edges were smudged. Could be cleaned off, but it does make you feel better for something intended as a cooking surface to arrive in clean condition. My daughter was moving and timewise a return didn't work out so we decided to test it out and see how it held up. It may turn out to be perfectly serviceable.
My recommendation would be that if you are very fond of your Silpat, as I am, stay with them. And maybe Matfer should take care that its products are sent out in clean condition.

3 out of 5 stars Non stick is great, but I'll stick with parchment paper   August 10, 2008

I used this mat to bake pig in a blanket. The bottom was still undercook whereas the top had turned brown. I used parchment paper and my bakery turned out perfect.
I will stick with parchment paper for my bakery and use this mat only for cooking meat.

5 out of 5 stars Home baking as easy as 1-2-3   August 2, 2008
Jared Castle (Roseburg, Oregon United States)
I bought this is January 2007. The mat keeps going strong and I give it a 5-star review because:

1. Everything -- pizza, cookies, biscuits -- slides right off the mat after baking.

2. This is very easy to clean.

3. I'm baking more at home and buying less ready-made foods, helping me reduce my monthly food budget.

5 out of 5 stars A must have!   July 20, 2008

I can't say enough about my Matfer Exopat Nonstick Baking Sheets. I purchased several for Christmas gifts and kept a couple for myself. They are priceless when it comes to perfect cookies and perfect cleanup.

4 out of 5 stars Absolutely nothing sticks   July 17, 2008

I love this, except for cookies. Here in the Florida where the humidity is always high, there is a problem with cookies rising. I find that using this mat for cookies increases the problem and the cookies come out hard and flat.
