If you have a hankering to whip up a classic beurre blanc, or you'd like to try your hand at making clarified butter, KitchenAid's 2-quart saucepan is a lovely choice; it's a heavy pan that conducts heat beautifully, not just on the bottom, but up the sides. The five-ply construction provides even, consistent heat to every inch of the pan and also holds up nicely to whisking when you need to make a sauce smooth or create volume. I also love the way this saucepan feels in my hand. It has a nice heft and balance to it. The handle is slightly curved to offer a good grip, and the lid has a really deep draw so it fits tightly. --C. Whitney-Ward
