Editorial Reviews:

Product Description
Comfortable to hold and razor-sharp, the 8" scalloped Bread Knife by J.A. Henckels cuts hard crusts like butter and soft bakery products without mashing. Part of the fine German cutlery manufacturer's Five Star collection, it features the company's FRIODUR ice-hardened stainless steel blade, crafted to hold its precise edge for a long time. The safe, ergonomically designed polypropylene handle has no sharp corners, so the strain on your hand is minimized.

Amazon.com Review
A scalloped 8-inch cutting edge and ergonomic handle make this a top-notch bread knife. Forged in Solingen, Germany, of a combination of ice-hardened carbon and stainless steel for edge retention, rust-resistance, and durability, this knife easily cuts through the crustiest of loaves as well as obstinate comestibles like pineapple.

The ergonomic polypropylene handle lies comfortably in your hand, facilitating strain-free use; the metal bolster acts as a finger-guard; and the blade, bolster, and tang are fused into a seamless piece for easy handling and balance. The absence of rivets and recesses in the synthetic handle allows for dishwasher use. Finally! Still, the best way to care for this knife is to hand wash it with a mild soap, rinse it well, and then immediately wipe it dry. --Marcela Broussard

From the Manufacturer

The TWIN Five Star range is a masterful blend of sharpness and ergonomic design. This series combines the world's most famous Henckels' blade (Four Star ) with an ergonomic molded handle. This perfectly proportioned handle has been created with a new open flow to accommodate each individual hand while improving convenience and safety for the user. The TWIN Five Star line contains knives for all tasks, including the following open stock knife types: parer, bread, sandwich, carving, chef's, santoku, and others. TWIN Five Star knives are also available in a range of block sets and gift sets, to be sure that your cutlery needs are covered.

A Higher Standard in Knife Construction

TWIN Five Star knives are precision forged from a single piece of exclusive-formula, high-carbon, no-stain steel under the all-new Sigmaforge standard. As a result, TWIN Five Star knives have improved quality consistency, lasting sharpness, and perfect geometry. Sigmaforge one-piece construction also provides high precision and improved stability of the blade and steel structure, thus improving cutting-edge retention for lasting sharpness. In addition, TWIN Five Star knives use J.A. Henckels' Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention.

It's All in The Grip:

The Five Star series features high impact polypropylene handles that are permanently bonded to the knife blades without any gaps. These ergonomic handles are break-proof, sanitary, and colorfast. In addition, the super bolster provides weight, insures safety, and adds balance.

Features:

  • SIGMAFORGE 1-piece, precision forged construction: Provides perfect geometry, high precision, and improved stability of the blade and steel structure, thus improving cutting edge retention for lasting sharpness.
  • Laser controlled edge: Is sharper and stays sharper longer. Has a more consistent blade angle.
  • Friodur ice hardening: Maximum no-stain properties and more blade strength. Improved resistance to corrosion and pitting.
  • Super bolster: Provides weight, insures safety, and adds balance.
  • Full rat-tail tang: Provides a proper balance and greater strength.
  • High-carbon no-stain steel, an exclusive J.A. Henckels formula: Non-staining, non-rusting.
  • Hand, precision honed blade: Is sharper and stays sharper longer.
  • Ergonomic designed handle: Safer and much more convenient in use.
  • Polypropylene handles: Comfortable molded handles and food safe
  • Dishwasher safe: Easy care (Although hand-washing is recommended by J.A. Henckels).
  • Full warranty: J.A. Henckels stands behind all its knives.

5 out of 5 stars My everything knife   June 2, 2008
Gabor Szakacs (Nashua, NH USA)
This knife is a very good bread knife, but in fact it is good for slicing almost everything. I have a block full of Henckel knives and this is the one I almost always reach for first. It slices effortlessly through meat, vegetables and even bread. The handle is very comfortable. I also have some 4 star Henckel knives and I think the 5 star is worth the difference for the handle (the handle is really the only difference between the two series). I've had this knife for 5 years, and it has held up quite well even though I put it in the dishwasher (not recommended). It sharpens up well with a standard sharpening steel. One of the best features of the knife (besides the handle) is the small section of non-serrated blade at the tip. This helps in cutting through the last millimeter right down to the chopping block. All in all, if I could have only one knife in the kitchen this would be it.

4 out of 5 stars Not "forged" but highly rated   August 29, 2000

My Henckels knife set hasn't even been shipped to me yet andthey will be the first good knives I have ever had. However I decided, after doing what research I could do, to go with the Henckels Pro S 9 piece set, and it is a tremendous relief because I think I've made the best choice possible. I am moved to say, however, that Consumer Reports does NOT call Henckels Pro S, Four Star and Five Star knife sets "Forged" but "Forged Style". Elsewhere on the internet (using AOL, at least)at site where they sell cutlery to both professional and home chefs, they say, there is what appears to be a statement by Henckels about its Pro S, Five Star and Four Star knives. It says that only the smaller knives (6" and shorter) in thes lines are traditionally forged. This is because in these lines, the larger knives are not made from one piece of steel which Henckels feels makes a superior product. The Amazon.com reveiwer for the 9 piece Pro S (and other Pro S line knives) knows this and doesn't try to say they're forged. I think this is good because I want to know what I'm getting and I appreciate it. Also, Consumer Reports gave both the Pro S knives and the Four Star a higher rating than the Five Star (in that order) because it said that the Five Star lost points on its overall score because it is "more likely to corrode than most". It rated the Five Star 10th. The Four Star apparently doesn't have a full tang (which Consumer Reports does not say or address) and it was rated 4th. Hencekels Pro S ( which like the Five Star has a full tang) was rated 3rd, only after Wustof Trident Grand Prix and Wusthof Trident Classic which ARE forged. Consumer Reprots doesn't define "Forged Style" but it does distinguish between it and "Stamped" which everyone calls Henckels Gourmet which Consumer Reports rated 14th. There is some confusion on the internet about whether or not Henckels more expensive knives and knife sets are forged in the traditional and usual sense of the word. At cooking.com, Henckels 9 piece Pro S set is selected by Cooking.com and reveiwed by Cooks Choice (and it's a rated as a top seller too) and they call that set forged which it is not. Given the quality of these knives and these sets, it may not matter that the larger knives are not forged, but it should nevertheless be clear that they're not. Also, I was a little upset to discover, higher rating by Consumer Reports or not, that the 9 piece Four Star set, despite the fact that it costs ... less than the Pro S and the Five Star piece sets , doesn't have s full tang. When I learned what that was ( I didn't know) at this website (thank you) and looked into these things, I decided to go with the Pro S set. If you want the real lowdown on the fact that these knives(the ones larger than 6") are not forged and what is better about the way they ARE made, according to Henckels, check out the Amazon.com review for the 9 piece Pro S set, and for that matter, the 8" Pro S bread knife--it's not that the reviewer says that what he says applies to the Five star and Four Star Henckels knives--he doesn't--it is that after careful research, I have concluded that it does. And I had a very hard time figuring this out--because there seems to be confusion about it. And I think people should know about it. It may not matter but there are people who think that it does. I can't wait to receive my set because i know I am going to love them and that they will be well worth the money.

5 out of 5 stars A bread-slicing dream come true!   June 16, 2000

Wow, what a knife! I bought this because I am a huge Garlic Bread fiend (and it matched my other knives). I can assure you that it will meet all of your bread slicing needs. A clean cleave through crusty garlic bread is in store for you, with almost no crumbs, and no mashing of the bread. I am a huge fan of the Henckles Five Star series, and it was the only knife to be added to my original six piece set. The ergonomic handle is the real selling point of the Five Star series. You will be hard pressed to go back!
